Each type of charter
and each charter company will have different requirements.
You should fully understand the level of competence
required before booking your charter. Most charter companies
will ask for your experience at the time of booking
and for bareboat charter, have been know to ask you
to perform a series of manoeuvres with the boat to assess
your competence, prior to handing over the boat.
Some companies offer a "Charter
Experience" course which you can book as part
of your holiday or undertake prior to arriving at
your charter destination.
In the UK you could consider doing
an RYA course, prior to chartering. You can view a
list of Sail Training companies in your area - you
might want to consider a course in a hotter climate.
A word of warning - even years of sailing experience
in your own country, does not necessarily prepare
you for mooring stern-to in the Mediterranean, in
a strange boat, two hours after arriving in a foreign
country, possibly jet-lagged (depending where you're
from!)
